This recipe is for those who are gluten free and FODMAP followers as well.
2 cups cooked brown rice
1 cup cooked ground chicken or turkey
1 egg
1/2 cup grated vegetables (of your choice) I use carrots and zucchini
1/2 tsp. basil or herbs you can tolerate
1/2 cup brown rice flour
1 – 2 tbsp. Olive Oil
Put cooled rice and chicken (all cooked) in blender or Ninja or food processor.
Add 1/2 cup grated vegetables (I use 1/4 cup carrots and 1/4 cup zucchini).
Add a raw egg and herbs to taste. (I use a teaspoon of basil.)
Process in blender or food processor until mixed. Do not puree! Mixture should be coarse. Pat into burgers. Makes 4-5. Coat each burger with brown rice flour.
Put 1-2 tablespoons of olive oil in stove top pan. Cook burgers in olive oil until browned on each side. Enjoy! Serve with fresh veggies and gluten free bread.
